A continuous rating holds with the airflow the manufacturer tested with. An ESC buried in a closed fuselage needs more margin.

What is the difference between AM32 and BLHeli_32 ESCs?

They are different ESC firmwares. Both take DShot from a flight controller; they differ in configuration tools and features. The firmware each ESC ships with is on its product page where the manufacturer states it.
